my asian cookery bible, bought in a secondhand shop 25 years ago, well thumbed and used and recommended wholeheartedly ! trouble is, its out of print and very hard to find...
I count myself as lucky to come across this book having never seen another copy in 50 years collecting.It truly is an encyclopaedia, with historical notes added.The layout for the recipes starts with shopping and technique tips followed by an ingredients list on the left side, with a prep list when required, on the right.Having assembled the ingredients and prepped there follows the actual cooking instructions.There are no fancy colour illustrations but there are some very good line drawings of techniques.I won't go as far as to say that you would never need to buy another book on this subject, but if you had only one choice than this probably should be it.If you see it, buy it. Another reviewer says its out of print, a shame as it should be widely known.Perhaps Prospect Books might get the rights for a reprint?
